Speculaas cookies

  



I promished some of my followers with Dutch roots a post with the recipe of speculaas, one of our best cookies. We eat these cookies when 'Sinterklaas' is in the Netherlands in November and the beginning of December. I eat these cookies all winter.You can read about this tradition in this post or in Wikipedia. The small cookies as big as marbles are for the children and are called: pepernoten (pepper nuts). There are at least five herbes in this cokies but the best cookies have more herbs,

The herbs

We grind a mix of following herbs:
8 parts cinnamon
2 parts nutmeg
1 part cloves
1 part cardemon
1 part white of black papper
1 part coriander seeds
1 part gingerpowder
1 part anise seeds
1 part macis

Ready to use or save for later

The dough


1 pound flower
4 ts baking powder
1/2 pound of brown sugar
1/2  pound cold butter
20 gram of mixed herbs
The best is to use almonds to put on your cookies.

Mix the ingredients for the dough. Cover and chill the dough for at least an hour in the fridge.


The cookies

Roll out the dough for thick speculaas to 0,5 inch of for thin speculaas to 1/8 inch.

0,5 inch thick, 30 min baking in the oven, 350 degree

10-15 minutes baking Children love these!!

Roll out the dough as thick as you want (between 1/8 and 0.5 inch) and cut out forms for your cookies. Put some allmonds on your cookies before baking. Baking time 15 to 30 minutes. Depends on how thick you make your cookies.
